I realized I never posted a menu last week! So here we have two for the price of one today!
Monday/Tuesday: Tostadas with Kale Salad
- Tostadas:
- Pan-fried tortillas
- fat-free refried beans from Trader Joe’s
- black beans for some extra protein (the Cuban-style from Trader Joe’s)
- Kale/carrot/onion slaw (we have a ton of kale in the fridge, and I’m trying to recreate something we had the other night at a pop-up)
- Kale salad:
- kale massaged with olive oil and a little garlic, lemon juice, salt and pepper
- Manchego shavings
- golden raisins
- Wednesday/Thursday: Tacos(yes, there’s a theme here, dependent entirely on our cravings. Everyone’s been talking about Taco Tuesday lately!)
- Tacos:
- Ground beef from Butcher Box
- Chili 3000 seasoning from Penzy’s
- Diced onion
- Kale (surprise!)
- Diced bell pepper
- Tomatoes
- Corn
- Corn tortillas or (for me) Siete foods tortillas
- I will do something with the kale. Probably sauté it with onion and some spices and lemon
- Friday:
- We’ll put the leftover taco meat over a baked potato (or sweet potato for the baby and me) and some barbecue sauce along with a salad. Yum!
Here’s what we had last week:
- Monday/Tuesday:
- Coconut curry from this month’s issue of Bon Appetit
- I added shrimp to it to add protein
- I also added some veggies like spinach and chard to add some greens
- Had a side salad
- Thursday/Friday: (Went out to eat on Wednesday)
- Pork Chops
- Pork chops from Butcher Box
- My husband put salt and pepper on pork chops, then them before placing butter on top and sticking them in the oven at 350° for about 15 minutes.
- Sautéed greens from the farmers market: onion, Swiss chard, yellow squash, zucchini
- Roasted potatoes
