This week I went for super easy and very quick to make because I knew I was going to have so much work that I would have very little time for food.
Breakfast
I tried out this oatmeal-like cereal because, as much as I love it, oatmeal doesn’t agree with me very well, and I wanted something just as simple to make in the morning (and filling). It wasn’t oatmeal, but it wasn’t terrible. I got more used to it as the week went on. Plus, between that, the chicken sausage (sundried tomato from Trader Joe’s), and the avocado, it kept me full all morning. That was a huge plus.
The baby had oatmeal again and my husband a repeat of yogurt, granola, and berries.
Lunch
I bought some of the Applegate organic hotdogs and had then with some salad greens and a few crackers. The baby only actually ate lunch at home two out of five days. When she was home, she had a hotdog plus frozen peas, sauerkraut, and tomatoes. Although I think she was teething this week and really didn’t want to eat much at all.
Dinner
Dinner number one:
I made a mushroom miso soup recipe I found in this month’sBetter Home and Garden. I used Korean sweet potato noodles instead of rice noodles. I bought salmon for the baby and me and just roasted it with some extra miso on top, plus salt and pepper. My husband just had the soup because he’s trying to do some meatless Mondays (I don’t do well without protein. It makes my blood sugar do all sorts of crazy things). I also added bok choi to it for the green portion of our dinner. I also used coconut
Which reminds me that I need to put miso on the shopping list since now we’re out.
Dinner number two:
I made this Beef Taco casserole from Fed&Fit. I actually had some of the salsa left over from making the Pollo Guissado from the previous week and used that as the base. It was a great way to use the salsa and also made prep a lot easier on me.
I also left out the cheese since neither the baby nor I can have it for the most part, so we usually just don’t have any in the house. I did add a small scoop of my husband’s yogurt as a bit of sour cream, which was good.
So that was our week. Somehow, we made it through, but it definitely helped that meals were quick and easy.
