Summer Fresh Basil Pesto

Fresh pesto is perfect for summer and it's simple to make! This classic recipe comes together with just a few ingredients in just minutes so you can spoon it over summer salads, roasted veggies and meats, over fresh tomatoes and mozzarella...
  • 2 C Fresh basil leaves
  • ½ C Pine nuts
  • 2-3 peeled garlic cloves
  • ½ C grated Parmesan cheese
  • ½ tsp. salt
  • 1 tsp. pepper
  • ½ C Olive oil
  1. Place the basil leaves, pine nuts, Parmesan, pine nuts, and salt and pepper into the bowl of a food processor.
  2. Pulse the food processor a few times until everything is combined.
  3. While the processor is running, drizzle in the olive oil. You may not use the entire two cups--keep drizzling until the pesto comes together and starts looking like a paste. If you want to add more olive oil, however, feel free! It's up to you.
  4. Serve and enjoy!
