Sweet and Spicy Maple Roasted Butternut Squash

This sweet and spicy maple roasted butternut squash is a little bit sweet and a little bit salty with a pinch of heat. It's a perfect side dish next to any autumn dish!
Ingredients
  • 1 butternut squash
  • 2 Tbsp. oil
  • 1 Tbsp. maple syrup
  • 2 tsp. fresh thyme
  • 1 tsp. pepper
  • ½ tsp. cayenne or chili powder
  • ½ tsp. salt
Instructions
  1. Preheat the oven to 375°.
  2. Place the squash on a foil- or parchment-lined baking sheet and place in the oven.
  3. Check the squash every 20 minutes until you can just stick a fork through the skin, 30 to 45 minutes.
  4. Let the squash cool until you can handle it, then cut the squash in half and scoop out the seeds.
  5. Make horizontal and vertical cuts in the squash, then cut from the skin to make cubes.
  6. Place back on the baking sheet and drizzle with olive oil, maple syrup, and sprinkle with thyme, salt, and pepper. Stir to mix.
  7. Place the squash in the oven for 45 minutes, or until the squash is golden and the edges are crispy.
