Easy Thanksgiving Side: Brussels Sprouts with Bacon

Savory Brussels sprouts with crisped edges mixed with creamy sweet potatoes and crispy, flavorful bacon makes the perfect easy-to-make Thanksgiving side dish!
Ingredients
  • 1 lb. of Brussels sprouts
  • 2 cups of cubed sweet potatoes
  • ½ lb. bacon, cut into pieces
  • 1 Tbsp. olive or grapeseed oil
  • 2 tsp. Italian seasoning
  • 1 tsp. oregano
  • 1 tsp. pepper
  • ½ tsp. salt
Instructions
  1. Preheat the oven to 350°.
  2. Cut the Brussels sprouts in half (or quarters, if they are large) and peel and cube the sweet potatoes.
  3. Chop or snip the bacon into small pieces.
  4. Place all ingredients into a baking dish and toss to combine.
  5. Place in the oven 45 minutes to an hour, or until the Brussels sprouts are cooked through, the sweet potatoes are caramelized on the outside, and the bacon is crispy.
  6. Adjust seasoning and serve!
