On to the last recipe in this year’s Easy Thanksgiving Side series here on Flurries of Flour! This recipe is classic Thanksgiving, but instead of doing anything on the stove, I let the oven take care of all the work (minus a bit of chopping!). Savory Brussels sprouts with crisped edges are mixed with creamy sweet potatoes and crispy, flavorful bacon! It’s the perfect accompaniment to all your Thanksgiving favorites like turkey, stuffing, and mashed potatoes!
I know. Brussels sprouts can be a hard sell for some people. They can be a bit bitter. When you roasted them, however, it brings out a soft sweetness with slightly crisped edges that I find so appealing. Plus, you’ll get the crispy saltiness from the bacon and the sweetness of the sweet potatoes for a Thanksgiving side dish that is full of layers of flavor!
There are two ways to do this. You can throw it all into the oven, or, if you want super crispy bacon, you will have to either make the bacon ahead of time or chop it up and make it in a pan. It does get crispy in the oven, but if you’re one of those people who likes heir bacon super, super crispy, you’ll want to make it before you stick everything in the oven.
- 1 lb. of Brussels sprouts
- 2 cups of cubed sweet potatoes
- ½ lb. bacon, cut into pieces
- 1 Tbsp. olive or grapeseed oil
- 2 tsp. Italian seasoning
- 1 tsp. oregano
- 1 tsp. pepper
- ½ tsp. salt
- Preheat the oven to 350°.
- Cut the Brussels sprouts in half (or quarters, if they are large) and peel and cube the sweet potatoes.
- Chop or snip the bacon into small pieces.
- Place all ingredients into a baking dish and toss to combine.
- Place in the oven 45 minutes to an hour, or until the Brussels sprouts are cooked through, the sweet potatoes are caramelized on the outside, and the bacon is crispy.
- Adjust seasoning and serve!
